Healthy Salad Recipes
This category of easy healthy salad recipes will be the most important food you eat to boost your immune system naturally and to prevent and reverse disease. These foods should make up the bulk of your diet for very best health. As you bring the body from an acid state (caused from an unhealthy diet and lifestyle) to an alkaline state, raw vegetables and fruit will begin to taste better and better. The best suggestion for keeping this food interesting and appealing is to have a variety of recipes and dressings on hand. So here are some great starting recipes.
2-3 ears of corn, cut off cobb
2 stalks celery, chopped
1 red bell pepper, chopped
1 orange bell pepper, chopped
1 medium cucumber, chopped
2 T. fresh parsley, chopped
½ small jicama, chopped (optional)
1 bag cherry tomatoes, cut in half
Combine all ingredients in a bowl. Toss with dressing and serve while fresh. Serves two meal-size portions or 4-6 single servings. Recommended dressings are
Super Fast Balsamic Vinegarette or Cilantro Dressing.
Garbanzo and Avocado Salad
1 cup garbanzo beans, drained
½ cup diced cucumber
1 T. parsley or cilantro, chopped
1 green onion with top, chopped
1 medium avocado, cubed
lettuce leaves or shredded cabbage
One of my favorites of my Healthy Salad Recipes. Prepare and combine first four ingredients in a medium bowl; chill if desired. Just before serving, prepare avocado and add to mixture. Toss with
and spoon mixture onto lettuce leaves or finely shredded cabbage. Serves one as a meal or 2-4 as a side dish.
5 Minute Cabbage and Black Olive Salad
1/2 head green cabbage, cored and fine sliced
1/2 can black olives, coarse chopped
Mix together and add dressing of choice. I prefer the 'Super Fast Balsamic Vinegarette' in my
Healthy Salad Dressing Recipes.
Sweet Healing Greens
2-3 cups fresh young bok choy, shredded fine
½ cup cilantro, chopped (heavy stems removed)
1 red bell pepper, chopped
½ -1 can black beans or dark red kidney beans, drained (optional for meal in a bowl)
Honey Mustard Walnut Dressing or Sweet Lemon Vinaigrette.
Serves one or two as a meal or 4-6 as a side dish.
Greek Salad Pita
3 cups romaine, shredded fine
½ cucumber, half moon slices
1 tomato, cut into small slices
1 can garbanzo beans, drained
2 T. Chopped dill pickles
6 kalimata olives, cut in fourths
or tahini dressing
4 pita halves
Mix all ingredients together and add dressing. Mix well. Warm pitas in toaster oven a couple of minutes and stuff with salad. Hummus can be a side dish or spread in pita.
