This category of ‘Easy Healthy Soup Recipes’ will give you a variety of soups - some raw, some cooked - but all are healthy and easy to make and will boost your immune system naturally supporting the prevention and reversal of disease. Here are some great starting recipes.

Cancer-Free and Easy Soup

2 cups brown lentils, washed
6 cups water and/or vegetable stock, adjust to desired consistency
1 T. extra-virgin olive oil
1 onion, chopped
2 cloves garlic, chopped
2 stalks celery, chopped
1/4 small cabbage, fine sliced
2 large carrots, cubed
1 large sweet potato, peeled and cubed
1 bunch greens, washed, de-stemmed and coarse chopped: spinach, collards, chard, kale, etc.
1 tsp. cumin (optional)
2 tsp. sea salt, to taste

This Healthy Soup Recipe is made with all the great ingredients known to help prevent and fight cancer. Briefly saute onion and garlic in olive oil. Add lentils, salt and water. Cook for 30 minutes. Add celery, carrots, cabbage and sweet potatoes. Cook for 20 minutes. Add greens and cook for 10 minutes. (If using kale, add it with vegetables.) Always use organic when possible. Serves 6


Five Minute Fire Roasted Tomato Soup

1 32 oz. organic fire roasted tomato bisque (Imagine Bistro)
4 stalks celery, chopped
2 ears raw corn, cut off cobb
2 T. chopped red onion
1/2 bell pepper, chopped or 1 jalapeno, seeded and fine chopped
1 can black beans, drained
1/2 bunch fresh cilantro, chopped
sea salt and pepper to taste

This Healthy Soup Recipe is half raw and bursting with flavor. Heat tomato soup to boiling, add remaining ingredients and turn off heat. Its ready when raw vegetables are heated through but not cooked. Always use organic when possible. Makes 4 large bowls.


Mexican Tortilla Blender Soup

2 ½ cups boiling water 1 jalapeno, seeded
1 carrot, trip top 1 vegetable bullion cube
1 green onion 1 T. raw sesame tahini
1 stalk celery 1/3 cup organic fresh or frozen corn, thawed
1 slice green cabbage 1/4 cup black olives
½ med. zuccini 1 tsp. cumin
½ yellow squash Handful of organic corn tortilla chips
1 small tomato Juice of ½ lime
1 garlic clove Salt to taste

Place first 12 ingredients (vegetables are all raw) in a blender or Vita-mix (request my Resource List below for more info on Vita-Mix) and blend on high for one minute. Then add remaining six ingredients and blend on extra low for a few seconds. Final consistency should be very chunky. Pour into bowls and consume immediately. Leftovers can be reheated as a cooked soup.

20 Minute Vegetarian Chili

2 T. extra virgin olive oil
1 large onion, chopped
3-4 cloves garlic, chopped
1 red bell pepper, seeded and chopped
1 green bell pepper, seeded and chopped
1 jalapeno pepper, seeded and chopped fine
1 large can crushed tomato
1 can black beans, drained
1 can red kidney beans, drained
1 can spicy refried beans, fat free
1 tsp. chili powder
2 tsp. cumin
Cayenne and sea salt to taste

This is one of my favorite meatless protein dishes. Saute onion, garlic and peppers in olive oil until tender but still crunchy. Stir in tomato, beans and spices. Heat until flavors mingled - not long! Add a small amount of water if thinner consistency is preferred. (You can substitute a pablano pepper for the bell pepper and jalapeno.) Serves 4.

I often serve this over a big bowl of romain lettuce, fresh tomato and organic ‘fritos’ with organic ketchup as a healthy version of ‘frito pie’.


Split Pea and Barley Soup

2 cups dried split peas, rinsed
½ cup pearled barley
1clove garlic, chopped
5 cups water
2 tsp. sea salt, to taste
Optional ingredients: carrot, celery, potato, onion, bay leaf

This is the simplest of my Healthy Soup Recipes. My very ‘picky eater’ daughter loves this - the simple version with no optional ingredients, but add the vegetables for more nutrients. Combine water and split peas, cook for 30 minutes. Add pearled barley, salt and garlic, cook for another hour, stirring occasionally. Add extra water during final cooking to reach desired consistency. Add optional vegetables last 30 minutes of cooking. Serves 4. I usually serve this with my ‘Cabbage and Black Olive Salad’
